Vegetable Soup

Thunderation! Can you believe it's January 5th already? Time flies when you're having fun huh? I decided to start off my new year right by making a big pot of vegetable soup with venison roast. Actually, I made two pots. I had been bragging about my culinary abilities to several friends and there was quite a bit of interest in my soup. Rather than suffering the humiliation of promising something and then not delivering, I thought I'd better follow through, so I thawed out my last two venison roasts and proceeded to cook. Frankly, that soup came out great! I'd like my name to be mentioned in the same breath as Martha Stewart, Julia Child and Wolfgang Puck. I think I could give the Campbell's Soup company a run for their money. Tom's Soups and Stews- even if you're not hungry, you'll enjoy a bowl of Tom's. Actually I don't use anything special, four or five potatoes, a white onion, cabbage, a one pound bag of Western Family f...

Chile and Prunes

As I have mentioned before, in an effort to reduce my feelings of guilt for staying home while my lovely wife is working, I've accepted the challenge of cooking at least some of the evening meals. Frankly, I'm a pretty good cook. I can't take all the credit though. When I was working at the school I had to work with one of the students in a home economics class. To be quite honest, I assumed it would be as much fun as watching paint dry. However, I was wrong. Today I'm putting to use many of the skills I learned in class. Last week I made a knockout Mexican quiche. The next day I baked a pumpkin pie. I made my own crust for both dishes- something I learned in home-ec. Tonight I lit the grill and cooked Alaskan halibut with a green chile blanket. To be honest- it was delightful. Thank you Mrs Maples, wherever you are. You were a great teacher. Yesterday afternoon I whipped up a pot of venison chile. The remnants in the bowl is all that's left of that whole big pot. T...

Corn Chowder

Today is the second day of the new year, and to start it off right, I decided to make a pot of soup. It just so happened that I had a pint of heavy cream left over from the potato soup I made on Christmas Eve. I don't want to toot my own horn, but that was some awsome soup. It's hard to taste bad when the ingredients include a pound of bacon, a whole white onion and a pint of heavy cream amongst other things. I used a recipe called the utimate potato soup recipe. I guess you could call it heart-attack soup too- it's full of all kinds of things that aren't good for you. Some people don't like cream soups. I have a friend who gags at the sight of any milk product. My daughter Jen was thinking of wrapping up a quart of milk for him at Christmas as a kind of gag gift, which in this case it would be- literally. It's kind of ironic- his wife is nursing their baby. The very sight could be a best case/ worst case scenario. It might be fun to watch, but the thought of...
